Preserved lemons are a regular feature in Moroccan cuisine. They are used to add fragrance and enhance flavour.
To use, wash each lemon to remove the brine and scoop away the pulp leaving the rind. Chop the rind and add it to any meat or vegetable dish that needs a lemony flavour boost.
